AUGUST RAW FOODS DINER'S GROUP



The Charleston Raw Foods Diner's Group met on Sunday, August 20, 2006 at 5:30 p.m. at Julie and Nick Schaer's home in Hurricane, WV.
It was a great Summer evening and the food was healthy, organic produce with a creative twist.
Thanks to Julie and Nick for hosting the dinner at their home in Hurricane.
Here is the winning orginial recipe for the month of August:






ALMOND DIP WITH A TWIST

about a cup of coconut milk
a thumb sized piece of ginger, chopped
fresh basil leaves to taste
a clove of garlic
a spoonful of honey
a twist of lime juice

Blend all of the above and add soaked almonds and blend some more. Keep adding soaked almonds and blending until mixture is "dippable".
Optional: add a hot chilli to taste. Serve with fresh organic raw veggies.

THE FARMER'S MARKET SALSA CONTEST WAS GREAT FUN ON SATURDAY! THANKS TO EVERYONE THAT CAME OUT FOR THE EVENT AND VOTED FOR MY SALSA! I MET ALOT OF NEW PEOPLE AND GOT SOME GREAT COMMENTS. I PREPARED "BOMBAY MANGO SALSA" AND AS PROMISED AM SHARING THE RECIPE BELOW:

1 large mango, diced into 1/4" cubes
1/4 cup pineapple diced into 1/4" cubes
1/2 cup raisins, soaked 1 hour
1/2 cloves of garlic, crushed
1/4 onion, finely diced
3/4 tsp. dried chili powder
1/2 cup pitted room temperature dates blended with water to make a paste
2 tsp. Raw apple cider vinegar
1-2 tsp. minced ginger root
1 tsp. celtic sea salt
1/4 tsp. cardamom (fresh ground)
1/8 tsp. clove powder
1/8 tsp. cayenne pepper
pinch of nutmeg

Combine all of the above in a bowl, stir and refrigerate overnight for best combination of flavors.
